Healthy Holiday Recipe: Roasted Pear and Pomegranate Salad

Enjoy this delicious guilt-free holiday recipe courtesy of Wegmans, as you get ready for the NBC4 Health & Fitness Expo Jan. 10-11!

Roasted Pear & Pomegranate Salad:

Ingredients:

4 red pears, peeled, cored, each half quartered lengthwise
2 Tbsp Wegmans Pure Olive Oil
Salt and pepper to taste
2 pkgs (5 oz each) Food You Feel Good About Fresh Baby Arugula Blend
1 pkg (5 oz) Melissa's Pomegranate Arils (seeds)
1 cup (4.2 oz) Food You Feel Good About Cashew Blend
1/2 of a 4 oz pkg Vermont Creamery Crumbled Classic Goat Cheese (Cheese Shop)
1/2 cup Food You Feel Good About Lemon Vinaigrette (Produce Dept), divided

Directions:

1. Preheat oven to 450 degrees. Toss pears gently with olive oil; season with salt and pepper. Arrange in single layer on foil-lined baking sheet.

2. Bake 35-45 min until golden brown and caramelized on the bottom. Remove from oven; cool completely.

3. Combine salad greens, pomegranate seeds, cashews and goat cheese. Toss with 1/4 cup dressing. Mound on serving platter or individual plates.

4. Toss pears with remaining dressing; arrange on salad.
