Healthy Holiday Recipe: Chilled Spicy Citrus Ginger Shrimp & Scallops

Chilled Spicy Citrus Ginger Shrimp & Scallops

Ingredients:

1 lb (16 oz) Food You Feel Good About Uncooked Peeled & Deveined Shrimp from Belize, thawed, halved lengthwise
2 cups (about 11 oz) Food You Feel Good About Wild Caught Patagonian Scallops, thawed
1/4 red onion, peeled, halved, thinly sliced
1 Tbsp thinly sliced Food You Feel Good About Basil
3 Tbsp finely chopped cilantro (leaves and stems)
1/2 cup Food You Feel Good About Spicy Citrus Ginger Dressing (Grocery Dept)
Juice of 2 limes (2-3 Tbsp)
1 pint Food You Feel Good About Grape Tomatoes, halved lengthwise
Salt and pepper to taste
Wegmans Organic Romaine Hearts, for garnish
plantain chips, for garnish

Directions:

1. Bring pot of salted water to boil on HIGH. Add shrimp; cook about 1 min; transfer shrimp to large bowl of ice water. Set aside.

2. Return water to boil on HIGH. Add scallops. Cook 1 min; transfer to bowl with shrimp. Let shrimp and scallops chill 1 min. Remove ice from bowl; strain seafood. Pat dry well with paper towel and return to bowl.

3. Add onions, basil, cilantro, dressing and lime juice to bowl; toss to combine. Add tomatoes; mix gently. Season with salt and pepper. Refrigerate, covered, 1 hour. Serve on small dishes; garnish with lettuce and plantain chips
