Cooking 4 You: Healthy One Pot Cooking

NBC4's Health and Fitness Expo is coming to the Washington Convention Center on January 12 and 13.

Here is an easy Asian style one pot recipe that Stratford University's Culinary Arts program will showcase at the Expo at 10am Saturday morning. This recipe will be cooked for you by Stratford Culinary Instructor Chef Christopher Carey.

Mushroom and Tofu Donabe

7 oz enoki mushroom

8 oz king mushroom or trumpet mushroom

5 oz shiitake mushroom

3 cups water

1 piece kombu (3 by 6in piece)

¼ cup sake

2 tbsp mirin

2 tbsp soy sauce

14 oz tofu, medium firm

Togarashi, to taste

2 oz wakame

Combine water and kombu in the donabe and let kombu soak for 30 minutes. Add sake, mirin, soy sauce, and all the mushrooms. Cover and set over medium heat. Bring to a simmer and remove kombu.

Add the tofu and cover again. Bring back to simmer and heat until tofu is just warm about 5 minutes.

Garnish the dish with the wakame and the togarashi. Serve warm.
