Ask Liz: Peeling Hard-Boiled Eggs

What's the best way to peel a hard-boiled egg? The American Egg Board says:

  • Buy eggs seven to 10 days in advance, and put them in the fridge.
  • This allows time for the eggs to breathe and helps to separate the membranes from the shell.
  • It's easiest to peel your hard-cooked eggs right after they've cooled because cooling makes the egg contract a little bit in the shell.
