Few take the farm-to-table movement as seriously as Chef/owner David Kinch of Manresa restaurant in Los Gatos, CA (50 miles south of San Francisco). For six years, he has partnered with Cynthia Sandberg's biodynamic Love Apple Farm, located in the Santa Cruz Mountains. The farm grows over 300 types of herbs, flowers, fruits, and vegetables exclusively for Manresa and also offers classes and workshops to the general public.
Sandberg's and Kinch's close partnership means that Kinch can work with plants at all stages of growth, and create endless combinations of ingredients that would otherwise be nearly impossible to acquire. In the clip above, watch a farm-to-table dish come together, a process Kinch sums up thusly: "It's almost like holding a mirror up to the garden and getting an edible reflection."
As James Beard Foundation's 2010 Best Chef: Pacific winner, Kinch will spend next week in New York City hosting a week of pop-up dinners for the organization during its awards festivities. Manresa will be closed from May 9-18, after which it will reveal a half-million dollar renovation that includes new dining areas, a lounge, bar, and cocktail program. [The Feast SF/Bay]
