Watermelon Recipes: Perfect Summer Dishes

In honor of National Watermelon Day Saturday try some of these delicious recipes. Chef Demetrio Zavala from Lincoln Restaurant stopped by NBC4 and shared how to make his summertime watermelon treats. Watermelon is one of the most nutrient-rich foods and is shown to reduce asthma, arthritis and heart disease.

Watermelon Duck Salad

2 ears of roasted corn off the cob
1 bunch of charred/grilled scallions
1/4 cup of sliced pickled radish
4 cups of diced large watermelon
2 tablespoons of extra virgin olive oil
Juice from 2 limes
6 ounces of duck canfit (buy made at store)

-Heat duck canfit and add diced watermelon (on a pan).

Watermelon Salsa Recipe

1/4 cup of chopped parsley
3 cups diced watermelon
1 cup of diced cucumber melon
Juice from 2 lemons
2 tablespoons of extra virgin olive oil
4 leaves of chopped fresh mint.
