Coffee Clinics Cater to All Your Caffeination Needs

Spend a relaxing Saturday at the Four Seasons Hotel in Baltimore (200 International Drive, Baltimore, Md.), home of boutique-y LAMILL Coffee.

LAMILL is reintroducing their Saturday coffee clinics starting March 10.

“It’s really about building a sense of community around our café with the people who come here,” said café manager Kristopher Fulton.

LAMILL is a new edition to the Baltimore area, having opened in November. Fulton said the clinics originated as a way to introduce people to the new café, but their popularity has grown.

“The main focus of the clinic is teaching people about coffee,” said Fulton. Each lesson focuses on a single-origin coffee -- coffees that can be traced to particular country, region, or farm.

If you go, you'll will learn different methods of preparing the coffee; LAMILL has six, as well as the best process for extracting the bean. You'll then get to practice these methods on site. “We try to make (the clinics) very interactive,” he said.

For $10, participants receive a hands-on lesson and the chance to sample the beverage paired with a pastry by award-winning Wit & Wisdom pastry chef Chris Ford. Sessions run from 10 a.m. to noon.

Additionally, LAMILL will now offer tea sessions every other week. The café serves 30 different types of tea, including Taiwan Jinxuar Buttermilk Oolong and Organic Assam Sewpur Estate.

“A lot of these teas are specific to LAMILL which adds to their appeal,” said Fulton.

The upcoming clinic schedule, with food pairings, is as follows:

March 10: El Salvador Finca El Aguila Pacamara coffee, paired with beignets with currant sauce

March 24: Black & green tea, paired with tea-infused shortbread cookies

April 14: Burundi gacokwe coffee, paired with mushroom and goat cheese "pop pies"

April 28: Herbal teas, paired with tea-infused shortbread cookies

May 12: Black Velvet coffee, paired with beignets with macallan butterscotch sauce

May 26: Oolong & white tea paired with tea-infused shortbread cookies
