Grilled Duck a l'Orange With Pineapple

Ingredients:

  • 1 young duck
  • 6 oranges, juiced
  • 1 cup brown sugar
  • 8 peppercorns
  • 2 tbsp orange zest
  • 2 tbsp Worcestershire sauce
  • 2 tbsp olive oil
  • salt
  • 1 pineapple

Cut the backbone of the duck out and flatten.

Mix orange juice, sugar, peppercorns, olive oil, orange zest  Worcestershire.

Cover duck in marinade. Let sit for one day.

Grill duck for 15 to 25 minutes.

Reduce marinade in pan for 10 minutes at medium heat.

Cut pineapple in circles and grill.

Serve duck with sauce.
