BBQ Pork Ribs

BBQ Sauce
Yields 1 gallon
Ingredients
1 tablespoon red pepper flakes
1 green bell pepper, diced
2 Anaheim peppers, diced
1 tablespoon minced garlic
5 cups ketchup
3 cups molasses
1 cup brown sugar
3 tablespoons Dijon mustard
3 cups lemon juice
2 cups water
Tabasco sauce, to taste
1 7 oz. can chipotle peppers (in adobo, with sauce)
1/4 cup Worcestershire sauce
Procedure
In a sauce pan over medium heat, add red pepper flakes, green bell pepper, Anaheim peppers, and garlic, and sweat the ingredients until they’re translucent. Add remaining ingredients, and simmer for 30 minutes. Transfer to a blender and blend until smooth.
Rub for Ribs
Ingredients
2 tablespoons paprika
2 tablespoons chile powder
1-2 teaspoons cayenne pepper
2 tablespoons garlic powder
2 tablespoons brown sugar
1 tablespoon ground cumin
1 tablespoon Colman’s dry mustard powder
1/4 cup salt
1 tablespoon fresh ground black pepper
1/2 cup cider vinegar
Procedure
Add all ingredients to a mixing bowl, and mix with a whip. Mixture should look like thick mud.
Rub mixture on both sides of ribs. Cook ribs on grill at low temperature (250 degrees Fahrenheit), or smoke at low temperature, or roast in oven at low temperature, for about 2.5 hours. When meat falls of the bone brush with BBQ sauce (see above).
