Here's how to make quinoa pilaf:
Ingredients
- 2 tsp. canola oil
- 2-4 garlic cloves, minced
- 1 small onion, minced
- 1 cup quinoa
- 1 1⁄2 cups chopped vegetables such as carrot, broccoli, cabbage and bell pepper
- 1 cup cooked beans such as chickpeas, red beans, or black eyed peas
- 2 Tbsp. chopped nuts
- 1 Tbsp. dried fruit such as cranberries, cherries, raisins, or currants
- Salt and pepper to taste
- 2 cups water
- 2 scallions, sliced
- 1 Tbsp. chopped fresh herbs such as thyme, mint, parsley, or basil
Steps
- Heat oil in large pot on medium-high heat. Add garlic and onion. Cook, stirring occasionally, until onion begins to soften and become translucent.
- Add quinoa, stirring well to coat with oil and aromatics. Continue to stir constantly until quinoa is slightly toasted.
- Stir in chopped vegetables, nuts, and dried fruit. Then add water and stir well.
- Bring to a boil, then reduce heat to a simmer and cover the pot.
- Gently simmer over low heat for approximately 15 – 20 minutes or until liquid has been absorbed.
- Turn off heat and stir in scallion and herbs.
- Adjust seasoning as needed.
