Here's how to make quinoa pilaf:

Ingredients

  • 2 tsp. canola oil
  • 2-4 garlic cloves, minced
  • 1 small onion, minced
  • 1 cup quinoa
  • 1 1⁄2 cups chopped vegetables such as carrot, broccoli, cabbage and bell pepper
  • 1 cup cooked beans such as chickpeas, red beans, or black eyed peas
  • 2 Tbsp. chopped nuts
  • 1 Tbsp. dried fruit such as cranberries, cherries, raisins, or currants
  • Salt and pepper to taste
  • 2 cups water
  • 2 scallions, sliced
  • 1 Tbsp. chopped fresh herbs such as thyme, mint, parsley, or basil

Steps

  1. Heat oil in large pot on medium-high heat. Add garlic and onion. Cook, stirring occasionally, until onion begins to soften and become translucent.
  2. Add quinoa, stirring well to coat with oil and aromatics. Continue to stir constantly until quinoa is slightly toasted.
  3. Stir in chopped vegetables, nuts, and dried fruit. Then add water and stir well.
  4. Bring to a boil, then reduce heat to a simmer and cover the pot.
  5. Gently simmer over low heat for approximately 15 – 20 minutes or until liquid has been absorbed.
  6. Turn off heat and stir in scallion and herbs.
  7. Adjust seasoning as needed.
