Recipe: Silver Diner Gluten-Free Quinoa Pancakes

    The Silver Diner's executive chef Ype Von Hengst and assistant chef Vincent give healthy, kid-friendly recipes to make cooking for the whole family an ease. (Published Friday, Oct 4, 2013)

    Ingredients:

    • 2 eggs
    • 1 cup buttermilk
    • 1 cup water
    • 1/4 cup soybean oil (or canola oil)
    • 1 tsp. cinnamon
    • 1 tbsp. baking powder
    • 1/2 tsp. baking soda
    • 1 cup shredded coconut
    • 8 oz. apple sauce
    • 2 cups quinoa flour

    Recipe:

    1. Place all the ingredients into a mixing bowl and mix by hand with a whisk. DO NOT OVER-MIX. 1-2 minutes max! (Mix should have a few lumps in it.)

    2. Using a ladle, scoop the mix and pour onto a hot pancake griddle. Cook until golden brown on both sides.

    Optional:

    Serve with side of fresh fruit like blueberries or grilled bananas and maple syrup or agave (since most pancake syrup is not gluten-free).
