The Silver Diner's executive chef Ype Von Hengst and assistant chef Vincent give healthy, kid-friendly recipes to make cooking for the whole family an ease.
• 2 eggs
• 1 cup buttermilk
• 1 cup water
• 1/4 cup soybean oil (or canola oil)
• 1 tsp. cinnamon
• 1 tbsp. baking powder
• 1/2 tsp. baking soda
• 1 cup shredded coconut
• 8 oz. apple sauce
• 2 cups quinoa flour
1. Place all the ingredients into a mixing bowl and mix by hand with a whisk. DO NOT OVER-MIX. 1-2 minutes max! (Mix should have a few lumps in it.)
2. Using a ladle, scoop the mix and pour onto a hot pancake griddle. Cook until golden brown on both sides.
Serve with side of fresh fruit like blueberries or grilled bananas and maple syrup or agave (since most pancake syrup is not gluten-free).
